Beetroot poori

Beetroot poori is a very vibrant and colourful poori made with beetroot puree. These cute mini poori will attract children as well as adults. It can be made like ordinary poori but I wanted to make it more attractive but giving some special shape. You can use cookie cutter to cut shapes. I didn't have cookie cutter so had to cut the shape manually and hence its not so perfect.

 Ingredients

1 medium size beetroot
2 cup wheat flour
Salt to taste
Oil for frying


Steps

Step 1
Wash and peel the beetroot and cut into small cubes. 

Step 2
Cook the beetroot pieces untill soft. Allow it to cool. 

Step 3
Add the cooked beetroot pieces to a blender and blend it till smooth.

Step 4
Transfer the pureed beetroot to a wide mouthed vessel. Add the wheat flour with adequate salt and make a smooth dough adding water little by little. Knead it untill the dough is soft and non sticky. Keep it covered for 10-15 minutes. 

Step 5
Knead the dough again and make 3-4 balls. Roll it into 3-4 big chapatis. Cut small circle, hearts or any tips using cookie cutter or a sharp edged glass/tumbler.

Step 6
Pour oil to a deep bottom kadai or frying pan and when the oil is hot, fry the poori one by one, till it's puffed. 

Step 7
Serve the poori hot with green chutney, coconut chutney or any side dish of your choice. 

Tips

  • You can even make chapati with the same dough. 
  • To make normal poori, made equal portions of the dough and roll it to thin pooris. 
  • Variations can be made by adding fennel seeds, garam masala and chilly powder. 
  • Palak poori can be made by replacing beetroot puree. Wash palak leaves, blanch it in hot water for one minute. When it's cool, blend it to make a smooth puree. This can be added to chapati or poori dough.
